These no bake Vegan Peanut Butter Blondies are now one of my favorite things! They are gooey squares of goodness, and I’m so happy I discovered them.
When I talk about meal planning and prepping, I suggest meals that require similar ingredients. It makes it easier to plan, cheaper to shop, and easier and more convenient to prep. I haven’t been meal prepping lately, but I have been making a lot of recipes with similar ingredients. That’s because I’ve been playing around with fueling recipes, and a few fun treats, which happen to require a lot of the same yummy and nutritional real foods. This one turned out to be way more delicious than I expected.

Vegan Peanut Butter Blondies
Description
These blondies are a yummy treat or can serve as a super sweet fueling source!
Before you gather ingredients, be sure to check the quantities for the “blondies” and the “frosting,” so you’re not short anything.
Ingredients
Blondies:
- 2 cups raw almonds
- 1 1/2 cup packed Medjool dates (pitted or remove seeds)
- 1/2 cup almond butter or clean peanut butter
- 3 Tablespoon pure maple syrup
Frosting:
- 1 cup packed Medjool dates (pitted or remove seeds)
- 3 Tablespoons hot water
- 1/2 cup almond butter or clean peanut butter
- 3 Tablespoons coconut oil
- 2 Tablespoons nut milk
- Pinch of pink salt
Instructions
- Place 1 cup of dates (the frosting dates) in a bowl with the 3 Tablespoons of hot water from the frosting ingredient list. Set aside for 10 minutes while you prepare the blondies.
- Process almonds in large food processor until they’re processed into course flour.
- Add dates, peanut butter, and maple syrup and process until thick and wet.
- Press dough into square pan until flat and extremely firm.
- Set aside while you finish making the peanut butter frosting.
- Place the dates and water in small food processor and process until it forms a paste. It is likely you will need to use a spatula to scrape the sides and lid and then finish processing.
- Add the remaining frosting ingredients and process until creamy.
- Spread the frosting evenly over the blondies.
- Place frosted blondies in freezer for at least 2 hours.
- Enjoy (you may enjoy them soft and gooey at room temperature or firmer out of the refrigerator).
