Shrimp Fried Cauliflower Rice

One of the easiest Fried Cauli Rice recipes.

Ingredients

  • 1 head of fresh riced cauliflower (or 20 oz bag of frozen riced cauliflower)
  • 4 tablespoons (1/4 cup) of sesame oil
  • 3 tablespoons coconut aminos
  • 1/2 cup fresh carrots, chopped
  • 1/2 cup frozen green beans (or fresh green beans, chopped)
  • 1/2 cup red bell peppers, chopped
  • 1/2 cup frozen green peas
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Himalayan pink salt
  • 1/2 teaspoon black pepper
  • 2 whole eggs.
  • 1/2 lb wild-caught shrimp, peeled, deveined, and tails removed
  • Toasted Sesame Oil (add for flavor at the end)

Instructions

  1. In a large skillet, heat the sesame oil.
  2. If using head of cauliflower, stir until it begins to get tender. At that point, add the carrots, green beans, red bell peppers, and peas. Stir until the veggies tender.
  3. If using frozen riced cauliflower, you can immediately add the remaining veggies. Stir until veggies tender.
  4. Add the coconut aminios, garlic powder, salt, and pepper.
  5. Push the veggies to the outside of the skillet leaving an open space in the center.
  6. Crack the eggs in the center of skillet and allow to cook about a minute. Then scramble them into the veggie mix.
  7. Add the thawed shrimp and cook until just done, which is when the thickest part of the shrimp turns from translucent to opaque. This takes only a few minutes.
  8. Add Toasted Sesame Oil to taste – it’s a must! 😉
