  • Author: Misty Krug

Description

These blondies are a yummy treat or can serve as a super sweet fueling source!

Before you gather ingredients, be sure to check the quantities for the “blondies” and the “frosting,” so you’re not short anything.

Scale

Ingredients

 Blondies:

  1. 2 cups raw almonds
  2. 1 1/2 cup packed Medjool dates (pitted or remove seeds)
  3. 1/2 cup almond butter or clean peanut butter
  4. 3 Tablespoon pure maple syrup

Frosting:

  1. 1 cup packed Medjool dates (pitted or remove seeds)
  2. 3 Tablespoons hot water
  3. 1/2 cup almond butter or clean peanut butter
  4. 3 Tablespoons coconut oil
  5. 2 Tablespoons nut milk
  6. Pinch of pink salt

Instructions

  1. Place 1 cup of dates (the frosting dates) in a bowl with the 3 Tablespoons of hot water from the frosting ingredient list. Set aside for 10 minutes while you prepare the blondies.
  2. Process almonds in large food processor until they’re processed into course flour.
  3. Add dates, peanut butter, and maple syrup and process until thick and wet.
  4. Press dough into square pan until flat and extremely firm.
  5. Set aside while you finish making the peanut butter frosting.
    1. Place the dates and water in small food processor and process until it forms a paste. It is likely you will need to use a spatula to scrape the sides and lid and then finish processing.
    2. Add the remaining frosting ingredients and process until creamy.
  6. Spread the frosting evenly over the blondies.
  7. Place frosted blondies in freezer for at least 2 hours.
  8. Enjoy (you may enjoy them soft and gooey at room temperature or firmer out of the refrigerator).
